Join Calgary Zoo Executive Chef, James Neilson for a hands-on workshop making sushi, while learning about sustainable food choices. Learn what sashimi grade fish is, how to properly make sushi rice, how to process albacore tuna and then make nigiri and spicy tuna cones and rolls. Participants will work in groups, taking turns. All knives are supplied.
